Kitchen
We bake in a separate room — no outsiders, pets or plants, in line with SanPiN sanitary rules. Supply and exhaust ventilation with filters keeps out dust and insects from the street
Workwear
We work in gloves, a cap and an apron. We never work wearing jewellery (earrings, rings). No false eyelashes or long painted nails
Utensils
Dedicated stainless steel utensils (certified for food production use) and food-grade silicone used exclusively for pastry production
Refrigerators
Our premises have many refrigerators, which we use only to store pastry products and ingredients, observing proper product separation
Towels
We use only waffle and paper towels to keep production clean
Cake Packaging
We treat and disinfect our cake boxes
Eggs
We use only pasteurised yolk, egg white and liquid whole egg. Ordinary eggs are a source of salmonellosis, a dangerous intestinal infection
Cakes
All finished products are stored in a separate refrigerator (with no raw ingredients)
Nuts
All nuts are heat-treated
Flour and Sugar
Sifted before use to keep out any debris
